What is Handvo?
Handvo is a dense, savory cake made from a fermented batter of rice, mixed lentils and grated bottle gourd (dudhi), poured into a pan and baked or slow-cooked until the top turns golden and slightly crisp, then finished with a mustard-seed and sesame tempering.
