What is Khaman Dhokla?
Dhokla is made from a fermented or instantly-leavened gram-flour batter, steamed until light and spongy, then topped with a mustard-seed-and-curry-leaf tempering, a touch of sugar syrup, and fresh coriander. Khaman is the softer, yellow, instant version most people mean when they say "dhokla."
