What is Khichdi?
Khichdi is a simple one-pot dish of rice and split lentils (usually moong dal), simmered together until soft with turmeric, cumin and a spoon of ghee. It's centuries old, eaten across India under different names, and considered the gentlest, most easily-digestible comfort food in the Gujarati kitchen — often the first solid food given to babies and the last thing cooked for someone recovering from illness.

Khichdi is naturally satvik: no onion, no garlic, minimal spice, and easy on digestion. It's a natural fit for Jain and Swaminarayan households, and it's the base of our tiffin menus on the days it appears.
