What is Undhiyu?
Undhiyu brings together purple yam, sweet potato, green beans, eggplant, and fenugreek dumplings (muthiya), slow-cooked with warming winter spices. Traditionally made in earthen pots buried upside-down ("undhu" means upside-down in Gujarati) over a slow fire, it's the centerpiece of Uttarayan and wedding-season menus.
Satvik, Jain & Swaminarayan Notes
A seasonal, vegetable-forward dish — ask for it Jain-style (without root vegetables) and we'll swap in seasonal greens and beans instead.
